The iPad/iPhone will not sync Outlook notes or tasks. I believe there are a few PIM apps that will but I don't know what they are.

The "notes" portion of Outlook has no relation to the Notes app on the iPad and does not sync like email, calendar and contacts do in Outlook. Someone used to have and app that did it for the iPhone if I remember correctly.
