Prevent docs from being deleted

I have several iPads on my manufacturing floor. We have app 1200 sku's which are constantly being updated. The iPads allow us to do that with a minimum of effort.

However we have discovered that some of the documents have been deleted, Is there a way to disable the delete function? I am using "Docs to Go".
