The iPad Mail app keeps a record of each e-mail addressed you've used, whether its in your contacts or not. That's why you'll see all these e-mail addresses when you start to enter an address in the e-mail's "To" line.

There is an option to delete those addresses or actually add them to your Contacts app (they aren't in Contacts automatically). See this for getting the option to remove the address from your Mail account (or to add them to your Contacts):

    Hope this helps.

P.S. And where are my manners?! Welcome to the forum! It's good to "see" you and I hope you enjoy your visits.
