ios5 update lost months of work HELP

Hi

I backed up my ipad and then installed the ios5 update, but I have no apps and therefore no data anywhere, so I tried restoring from backup and it just restored the same basic "as new" installation.

Now when I go to restore it doesnt even show the backup I did at 2 today just the 3 or 4 since 9oclock trying to get my data back

Please help I'm seriously panicking as I have months of work meeting notes on the ipad and I need them (some of them tomorrow) .....
