How to move cursor on iPad 2 without erasing existing text?

Long press on the screen where you want the cursor, and the magnifying glass tool will appear. Position it where you want to insert text, and start typing. Existing text will move to accommodate.

Once the cursor appears ROLL your finger/thumb to put it in the wright :) spot. This kicked my but til I figured it out.
