I have jailbroken my phone and downloaded the app 3g unrestrictor. However i was wondering whether it cancels out all restriction, such as on google preferences the search is set on strict (as my little brother lends my phone...)

No, all this app does is fool SOME applications on the device which say you MUST use Wifi into using 3G instead. It has nothing to do with changing any of your browsing or website preferences, so strict search in Google will not change...
