Deleting mail

Just set up son with new iPad and cannot remove old gmail

Try the main settings the one that looks like a cog - mail contacts calendar - gmail - delete account

If you've set up Restrictions on the iPad you may have locked the ability to change/delete accounts. You'll have to go back into Settings > General > Restrictions and enable this, at least temporarily, to delete the Gmail account.
