By chance do you have your restrictions on on your iPad?

Have you also tried to connect your iPad to iTunes on your computer and deleting that way?

You may want to try this, touch and hold an app until they all start to wiggle. Then drag app icons over other app icons to create folders, this will free up space on your last home screen and hopefully the older apps will start to re-appear and you can then delete them.

    Another way to delete apps.

Go to Settings > Usage. When the Storage list populates, select Show all Apps at the bottom. Scroll to the app you want deleted, select it, and choose the big red Delete App button.

But you really should start using folders, as Gabriel described. It will cut down on the confusion and number of pages; not to mention eliminate hidden apps. Well, unless you exceed both the page and folder size limits. But that's a whole lot of apps.
