I'm looking for a dictation app that will let me see the text on the screen as I type. Everything I have tried so far, including Dragon, uses a record-translate-print method which makes it difficult for me to put my thoughts down.

I don't think you'll find one. How the dictation works is that your recorded voice is sent to a server,transcribed and sent back to the iPad as text. This is why you can't get the live running transcription you're looking for.
