Changing iPad language preferences

My selected language is english. Recently I had reason to type an email in german, and the spellchecker kept changing what I typed to something that looked remotely like what it imagined to be english words. Painful typing!
In desperation I changed the language preference to german and this worked like a dream.
Later I changed the preference back to english, but now the spellchecker persists in changing my english words back to something resembling german. The language preference is now definitely set to english, but the spellchecker doesn't seem to notice.
How can I bring it back to its original sane behaviour?

With regard to your question, you can reset the spell check dictionary to the factory default. Open Settings > General > Reset > Reset keyboard Dictionary
