A way to hide that I am using an iPad?

Is there a way I can hide that I'm using an iPad when surfing the web?

It feels like so many sites are trying to get you to install their cool app, that it's beginning to feel like I'm constantly clicking through pop-ups.

It is actually pretty simple. Just get a browser such as iCab (My favorite) , or Atomic. They have browser id settings you can change, making it look as if you are using a different browser.

You can also block popups in Settings > Safari. Though that won't prevent all forms of advertising windows. Those ad designers are pretty sneaky.
