it depends what youre attaching but some of the files have the little arrow with "share" so you can send by email or I think you can copy/paste the files as well
You have to think opposite from what you are used to when using a computer. On the iPad, you have to be in the app (program) that is running the file. Then, you e-mail from within the app by selecting to (as Unleashed pointed out). It's not like a computer where the Mail program can/does dip into a file storage area to select a document.
Takes a bit of getting used to, but that's the way iOS and Apple roll (it's for security reasons).
