Check out all your settings - especially multi-touch and accessibility.

You may have activated the Accessibility feature, Zoom. If so, a three fingered double tap on the screen should return your iPad's view to normal....
Sounds like you may have activated the Grayscale feature in Settings > General > Accessibility.
Also make sure it's not checkmarked in Accessibility Shortcuts:

It's in accessibility shortcuts it's one of the options to choose from.

It looks a little like the white on black screen in accessibility, settings.

Triple tap the screen. You have zoom turned on. You can turn it off in Accessibility.
Go to Settings > General > Accessibility and see if you've got White on Black turned on.
The Zoom feature can be turned on/off under Settings->General->Accessibility->Zoom
