Run the two independently from our single computer ?

Yes. It is possible, but there are some considerations.


Do you want her to have her own AppleID? If so, she (or you) will have to pay for all of her apps, even if you have bought them for your own iPad.

If not, you will have to make sure that your data is kept separate from hers when apps, such as Pages, want to sync it in the cloud.

Yes it is possible as Kevin has said and if you both have the same apple ID you will be able to share apps also.
