I opened an email and now the page is stuck/ frozen. I can't open up any other emails to read, I can delete and go between folders, just not remove the one page. I have a gmail account if that matters.

You need to close Mail. Then double press the home button to open the multitask bar. Long press the Mail app in the multitask bar until a minus sign appears on it. Touch the minus sign and the app will disappear. Press the home button again to return the screen to normal. Now restart mail and it should work as normal.
