Is there a way to select Text in Facebook posts on an iPad and copy it to another app?

With regards to your question you can copy text when in Facebook on Safari, you don't say what app you want to paste to though, but you can paste it into many other apps.

The official FaceBook app does not support copy&paste; however, as Leelai said you can visit FaceBook in Safari and use copy&paste there.
