When I try to add an email address to the contact list it will not accept an @ sign or a . (period) What am I missing?

I tried to reproduce this on my wifi version. The only field that I found that would not accept the "@" sign was the phone number field. I was able to put an email address in the other fields.

You must be trying to put it in the wrong field, it works perfectly in the correct field.....
