Is there away to select what syncs? I want to sync my e-mail contacts without syncing anything else.

Open iTunes with your iPad connected. Select the iPad. You'll see several tab/links at the to of the page. Go through each of these and turn on/off what you want.

For accounts that you create on the ipad under Settings >> Mail, Contacts, Calendars, you can select each account and turn on/off whatever is available. Some types of accounts offer contact syncing, others don't.
