I Use Gift Cards...
This is the best peace of mind alternative to credit cards that I have found for iTunes purchasing, Amazon Kindle book purchases, etc. For websites that don't have gift cards, I use Paypal. And if all else fails I have a very limited US$500 VISA card.
I'm not paranoid but I've been doing e-commerce for years and I have not had any problems.

Yeah I am always using iTunes Vouchers instead of Credit Cards to purchase things. I never have used a Credit Card on iTunes
