(Actually, what I get is the file name in the center and containing folder nam in the upper left. My magnifying glass suggests that is what you get too. But certainly close enough to resolve my problem.)
I wonder why I didn't see this result before. Perhaps I was swiping but never tapped.
It's fairly common for apps to hide the controls when viewing a document. Tapping in the center of the screen is the usual way to get them back.
Apple is pretty good about setting guidelines and encouraging developers to follow them. It won't be long before using various gestures will feel as natural as right clicking, and you'll know what to expect from the various icons and menus. Best way to learn is just to tap, double tap, tap-hold, and swipe on stuff to see what it does.
And then there are the two, three, and four finger gestures.
