I recently sold my iPod on eBay (to upgrade to a better one). However I just realised it is still backed up on iCloud. I made sure I reset the iPod to factory settings before I sold it (as a new iPod). Is my data still secure? Should I just delete the backup?

You need your apple id and associated password to access your icloud account. These will have been deleted on the device during reset to factory settings, so you are fine.
