I am very new to this product. I don't even know which model I-Pad I have. My question is, how do I remove an account and start over?

Go to Setting-General-About-Regulatory and check the model # and compare it to this chart:

First I suggest you go to Settings -> Messages -> iMessages. Turn it Off. If you don't see it, then you have a very old iPad.

Then go to Settings -> General -> Reset -> Erase All Content and Settings. That will wipe the device clean.
