I think there may be a greater chance that your games won't work if updates are not performed on a regular basis.

I would just hate to upgrade only to find out that some of my apps no longer work. If that were to happen, is there a way to downgrade?

Not on a stock iPad you cannot. If jailbroken...maybe if you have saved your blobs...though an expert in the field of JB would speak better than I about this if it were a possibility or not.
