When I sync my iPad, Itunes uses a default drive as workspace. In my case it's the C: drive. Unfortunately, my C: drive is very full. Itunes chokes because the drive is full. I have plenty of other drives... How do I get Itunes to use another drive?

Try uninstalling iTunes then change install location during setup.

When you say "workspace", I assume you mean where your media is stored? i.e. Music, Apps, Videos, etc.
In that case, go to preferences > advanced and you can change your media library location. Just make sure you move over your existing folder to the new destination when you change it. iTunes does not move it for you if I remember correctly...
