About LinkBacksI heard somewhere that it's possible to back up all the apps and info in those apps (ie numbers) on your desktop. Is this true? And if it is, how do you do it?

You connect the iPad to your PC and start iTunes. It creates a full backup of your iPad.
But this is pretty straight forward, I feel like I misunderstood your question

As Dontunderstand says.
You've probably done it without you even realizing as its a normal part of the sync process.
