why does some websites automatically goes to the mobile website version instead of the full site?

It is dependent on the website. They can force it or give you a choice. There is nothing you can do from your iPad to change this other then using a different browser (such as Opera).

Best solution though is to mail the site and let them know how you feel about the limited/mobile experience from your iPad.
