This is a built-in part of the iBooks app. To look up a word, you hold your finger (any finger, it doesn't matter) on the screen until the magnifying glass comes up. Drag it around the screen until the word you want is highlighted then lift you finger off the screen.
When you do that, you will get the option to
Copy the word to your clipboard so you can paste it somewhere else, look it up in the Dictionary, Highlight the word as if you used a highlighter (but you can remove the highlighting later), write a Note about that word on a virtual Post-It-Note that stays attached to the book (but you can also remove it later), or Search for that word elsewhere in the book or on Google or Wikipedia.
