LOL I just found my shuffle button today. In the itunes app it should be on the bottom left. In the app on the ipad, if you press songs, go to your song list and scroll all the way to the top, you will find the shuffle button.

I know it is confusing and unlike the iTunes program on your computer, your buy your stuff with the iTunes app and play them with the iPod app!
The shuffle button it is in the upper right corner --

you have to click an album photo then you can pick shuffle and replay.
