I use invoice2go, it's fantastic. It graphs, keeps track of everything in a cloud, it saves so much time it's amazing. Once you input your price list it only takes seconds to make a professional invoice then you can email it from the app or just print it.
Use goodreader or iannotate for all your PDFs use. Notability is really good for making general notes. Your best bet is probably to go to the business and education categories and look up the top apps.
