Notes Plus is worth looking at. Have a look in the App Store, then surf to the Developer's website and see the videos...

Penultimate is a great note taking app very innovative great for quick fast note taking all I am missing is a stylus to give me that pen feel.
Does any of the above suggestions synchronize with Microsoft OneNote? I have all my notes in "the cloud" in my Windows Live Account.
Try MobileNoter - it can sync with OneNote
