It kind of depends how you activated them in the first place.
If they were enabled during jail breaking, then a setting should be under Settings->General.
If you have activated the gestures via ibackupbot, you should follow the exact same procedure, but instead of adding, remove the two lines.
Not sure, what happens with XCode, it might add a gesture setting as well.
With Xcode, there is a switch in settings.
I'm on an iPad2, never activated them as I can't Jb. They are on by default.

They aren't activated by default. Even if they were, then there would be a setting under Settings->General to turn them off.
This is strange. Actually, I think they were enabled when I restored my iPad2 from my old iPad1 profile, which had them enabled. Guess I am stuck?

If that doesn't help either, you would have to restore your iPad 2.
Call Apple support. I think this is one of the few instances where they could help you better than these forums.
