About LinkBacksI have an ipad 1 and when I go to put an address in the 'to' field in a new email, a whole list of addresses that I have previously used comes up. Is there some way to delete all of these?

Unfortunately, no. That is a "helpful" feature of Apple's Mail app that really isn't - and cannot be deleted. Well, you can, but you'd have to restore the iPad to a new, fresh out of the box condition (and you'd lose all your data and settings). So, no, there is really no way to remove those old addresses. Sorry.
