How do you change a book in iBooks to sepia instead of black on white.

When you open a book, click on the AA and slide the button to turn sepia on.

I heard that iPad books bought from smashwords all have red text instead of black and white. Is this true?

Just get one of the free titles from Smashwords and check it out. I don't remember it being that way, but it would be easy to check.
