No, I think that is a matter of copyright and you're stuck with the publisher's choice.

Right click the file, and choose get info, then artwork. Same way you do on audio files.

You can change it to anything you want.

ok doesn't matter anyway I found a tutorial on how to if someone wants to change his iBooks covers too. you can see the instruction here it's easy to do: Mac Tech: How to Customize Your iBook Covers
