All three demo materials produce platinum. It's random.

Chances of me getting diamond and platinum ores are by using shovel. I mostly get silver and gold ores with the other 2 tools.

I just used a little dynamite and got one silver and one ore. So you do get platinum with all. Maybe it's just not as common. Shovels do give double the ore as dynamite, so I guess that's to be expected.
