There should be settings under the "settings" tab. You should be able to password protect it as well. I can only speak from a jail broken prospective from my iPhone but I know there are additions that'll individually lock individual apps one at a time.

Fraid no obvious setting to take off line unless I delete then reinstate

settings - mail, contacts, calendars select your account, then you can toggle the sync for mail on or off.

Not sure what you mean about is it safe?
