What is causing the videos on the iPad to pause while playing ?

Could be dodgy encoding. How were the videos created?

If you are streaming them, then it could be buffering due to bandwidth restrictions ;)

In that case the only thing to do is wait for the video to finish buffering before trying to watch it.
