I don't think there is any way to do this directly on the iPad. But can you save the file that you want to print as a black-and-white file?

I usually want to print web pages, internet articles, etc. Maybe Apple will improve Airprint in the next release to include Printer Properties!
Yeah there is no way as far as I know, I would like this options as well. Not related to AirPrint but I wish I could find out how to get my HP printer to stop using the Photo black cartridge and just use the normal black cartridge.
